Ok, I promised a recipe soon and that’s been SEVERAL days ago, so while I have a few minutes I can steal, I am posting one of my favorites. My neighbor introduced us to these, and they are ridiculously fabulous! We have made these multiple times since “discovering” them. Oddly enough, I think alot of people have heard of them, but I never had. So with that thought in mind, I’ll share with all of you 🙂
You Need:
1 bag of golden/yellow potatotes
1 bag of shredded cheese (we use cheddar, but you can use whichever you like best.)
Bacon Bits or Chopped up Bacon
Butter
**Peppers, Onions, and Mushrooms are Optional**
I usually slice up my potatoes (like you are making potatoe chips) the morning I am going to cook Campfire Potatoes. I slice them and put them in a dish and let them soak in salt water all day. Makes them softer and it doesn’t take as long to cook. Heat your oven to 350, grease a cookie sheet with butter/margarine and spread your potatoes out as evenly as possible.
Cook for 30-45 minutes, stirring the potatoes around ever 15-20 minutes to prevent them from sticking or burning. After they are done, put them in a casserole dish, add your cheese, bacon bits, etc. as desired. Cut up a few small pieces of butter and mix it together. Put it back in the over for 5-10 minutes to let the cheese melt, and then serve.
These are really easy and really good. They are filling, so I don’t usually serve them with anything heavy. I know this isn’t the fanciest recipe, but it’s one of my absolute favorites and it doesn’t take much time to prepare or to make. Let me know what you guys think 🙂
